What's the difference between text extraction and AI OCR?

Text extraction is fast and works on PDFs where the text layer is already embedded — regular documents, exported reports, and most business files. AI OCR is for scanned PDFs and image-based files where the text is part of an image. It takes slightly longer but handles content that standard extraction can't read.
